The flavor profile of the 2006 Cabernet is similar to the 2003 vintage, the first crop from Minnick Hills Vineyard. It displays tons of dark, jammy fruit, blackberries, currants, and huckleberries. It has the spiciness that is characteristic of the Minnick Hills Bordeaux varietals, a little earthy, with lots of bay leaf and sage. As the vineyard ages, the fruit is displaying greater complexity, and better tannic structure.
